1 cup Black Rice
1 Savoy Cabbage
1 Granny Smith Apple
1/2 cup Walnuts
1/2 cup Golden Raisins
1 small Red Onion
1 TBS Dijon Mustard
1 oz Red Wine Vinegar
Shred the cabbage, slicing very thinly. Slice the apple into matchsticks. Mince ½ the red onion, and julienne the other half. Chop the walnuts.
In a medium saucepot, bring 2 ½ cups of water to a boil. Salt the water, and add black rice (or wild rice) and ½ the walnuts. Bring to a boil, cover, and simmer for 20 minutes.
In a small bowl, combine minced red onion, mustard, golden raisin, red wine vinegar, and 1 TBS olive oil, salt and pepper. Add CrEATe Oil of desired dosage.
Wilt the cabbage in a medium sauté pan, with salt and pepper. Cook over high heat, with 3 TBS water, covered, for about 6 minutes. Add julienned red onion and cook for about 10 minutes more, stirring frequently.
Turn the heat off the cabbage, and add the minced red onion mixture.
Fluff the black rice, and place it on the plate first. Then the cabbage, and the apple on top. Garnish with the remaining walnuts.
