1 large Chicken Breast
1 tsp Turmeric
3 cloves Garlic
1/2 cup Couscous
1 bunch Mint
1 Fennel Bulb
1 Preserved Lemon
1 cup Orange Juice
Preheat Broiler. Cut the fennel bulb into 6 wedges, removing most of the root tip. Mince 1” of one of the green stems and reserve 4 fennel fronds for garnish. Finely slice the mint leaves, small dice the onion, and mince the garlic. Clean and rinse the preserved lemon, removing interior flesh, and cutting the rind into small diced pieces.
Chop the chicken breast into large pieces. Boil ½ cup water. Season with salt, and pour over couscous in medium sized glass bowl. Cover with plastic wrap and let sit.
Combine chicken breasts, turmeric powder, 2 cloves garlic, and ½ the onion in food processor. Season with salt and pepper. Pulse 5 - 6 times, then blend about 30 seconds until ground. With a spoon, shape into tiny meatballs on a sheet pan lined with parchment paper. Drizzle with olive oil and broil for 5-10 minutes.
While the chicken cooks, in a separate hot pan, caramelize the fennel. Season with salt and pepper, cook on the same side for 5-6 minutes, until golden brown. Flip over, add remaining diced onion. Stir and cook about 4 minutes, until onions are tender, then add orange juice and simmer to reduce, about 5 minutes, seasoning with salt and pepper.
In a medium sized mixing bowl, combine preserved lemon, 1 clove garlic, minced fennel stem, and mint, with zest of one lemon, juice of one third lemon, 1 TBS olive oil, and desired dosage of CrEATe Oil. Use this sauce to dress the couscous.
On a plate, place the couscous salad, roasted fennel, and chicken meatballs. Pour orange juice sauce around. Garnish with fennel fronds, and mint sprig.
