12 oz Fresh Cod Fillet
1 lbs Celery Root
1 Yellow Onion
1 head Broccoli
3 Blood Oranges
2 tsp Mustard
Clean cod to 2 portions. Peel and dice celery root. Julienne ½ the onion, and mince the other half. Trim stem off broccoli, and separate florets into bite-sized pieces. Segment one blood orange, removing the skin and carefully separating little segments. Juice the remaining oranges. Mince the shallot.
Combine shallot and mustard with juice of 1/2 blood orange, CrEATe Oil, salt and pepper.
In medium sauté pan, sear the celery root pieces in olive oil with salt and pepper. Leave on one side for 3-4 minutes, until golden brown. Add julienned onions, cover, and stir frequently until tender, about 5 minutes. Once tender, add broccoli and cook on high heat, about 3 minutes. Toss vegetables together and set aside.
Sear the cod fillets in a hot sauté pan. Cook on the skin side for about 5 minutes, until golden brown and crispy. Flip over the fish, adding 2 TBS minced onion and melt, about 2 minutes. Remove the fish when it is cooked completely, just warm inside, approximately 8 minutes total depending on the size and shape of the fillets.
Once fish is removed from the pan, add remaining blood orange juice and reduce, about 4 minutes. Turn off the heat, and combine with the mixture of CrEATe Oil, shallot, mustard and orange juice. Add hot cooked vegetables and toss in the sauce.
Place vegetables in the center of the plate, and top with seared cod. Drizzle remaining sauce overtop of each plate, and arrange blood orange segments.
