1/2 lb Snap Peas (with tendrils)
5 oz Parmesan Cheese
6 oz Large Shell Pasta
1+1/2 cup Heavy Cream
1/2 lb Smocked Slab Bacon
1 pinch Red Chili Flakes
Boil 3 qts of water. Clean scallops by removing their feet, Rinse and lay on paper towels to dry. Wash snap peas (sub with green beans if none available), and remove threads. Slice peas on the bias. Slice bacon (slab or thick sliced) in large rectangular pieces. Slice lemons in thirds lengthwise. Grate parmesan cheese.
Cook bacon lardons slowly in a sauté pan, about 10 minutes over medium heat. Reserve and strain bacon fat, and set lardons on paper towel to dry.
Cook large shell pasta in salted water until tender, about 6 minutes, and drain. Toss in 1 TBS olive oil and set to the side. While pasta cooks, crack 2 eggs and beat with a fork, adding desired dosage of CrEATe Oil. Set to the side.
Sear the scallops in a hot sauté pan, with high temp oil, seasoned with salt. Cook on one side until golden brown, about 3 minutes. Flip the scallops and cook on the other side for about 30 seconds. Remove from the pan and add snap peas immediately. Toss snap peas with bacon lardons, and leave over very low heat.
In the pot used for the pasta, reduce the cream by 50%, cooking over high heat for about 5 minutes with chili flakes and a pinch of salt. Once reduced, add parmesan and zest of one lemon. Stir well. Add pasta and bacon lardons with snap peas, and toss. Drizzle in egg CrEATe Oil mixture. Stir vigorously over medium heat.
Use tongs to plate pasta then add the the scallops on top.
