1/4 lb Asparagus
1 Acorn Squash
1/2 lb Fresh Morel Mushrooms
2 TBS White Wine
3 TBS Butter
Preheat oven to 400. For fresh morels, rinse three times, remove all debris, and lay to dry on paper towels. Once dry, cut in half lengthwise. For dried morels, boil 2 cups of water and pour over mushrooms in a glass bowl. Use a small plate to submerge the mushrooms, cover with plastic wrap, let stand 10 minutes, drain, and slice in half.
Rinse, then trim tough ends of asparagus, then peel to expose remaining tip. Cut acorn squash in half, remove seeds, and cut halves into ½ inch slices. Clean the scallions by rinsing and removing outermost layer. Cut the tiny root tip off, and slice thinly. Mince shallot. Cut butter into 6 cubes. Slice the lemon in thirds lengthwise.
In a hot sauté pan with olive oil, season and sear acorn squash. Cook on one side for about 6 minutes, until golden brown. Flip, and place pan in the oven for 5 minutes.
Season the asparagus with olive oil, salt and pepper. In a hot pan, cook the asparagus, about 5 minutes, until bright green. In a separate very hot pan, sear the mushrooms in butter with salt and pepper, cook about 3 minutes, adding a tsp of butter, then flip and add shallots and scallions. Turn the heat down to medium, stirring frequently.
Deglaze with white wine and simmer for 5 minutes. Then reduce the heat to very low, and whisk in butter 1 cube at a time. Once fully incorporated, remove sauce from the heat entirely, squeeze 1/3 lemon, and whisk in desired dosage of CrEATe Oil. Set the sauce in a warm place, covered with plastic wrap.
Lay one ring of acorn squash in the center of the plate, prop asparagus in between another piece of acorn squash, and spoon morels all around with the sauce.
