12 oz Fresh Salmon
6 oz Soy Sauce
3 cloves Garlic
1 Chili Pepper
12 oz Edamame (fresh or frozen)
1 bunch Mint
Boil 2 qts water. Cut salmon into 6 oz portions. Mince garlic. Mince chili pepper (jalapeno or any other hot pepper variety). Pick and slice mint thinly. Peel and cut rutabaga to wedges. Cut lemons in thirds.
Combine 2 tsp chopped chilis (or less if you want less spicy), 1 clove mince garlic, and 6 oz soy sauce. Reserve 2 TBS of this mixture in a small bowl, and pour the majority over the salmon. Let the salmon marinate in soy mixture for 15 minutes while preparing everything else.
In a small bowl combine 3/4 cup olive oil, salt and pepper, juice and zest of 1 lemon, and 3 TBS water. Boil edamame (fresh or frozen) with a pinch of salt for 6-7 minutes, until tender. Strain and transfer to a blender. Add liquids and pulse, blending until smooth. Stir 1/2 cup of the mixture with sliced mint.
In a hot sauté pan with olive oil, sauté the rutabaga for about 6 minutes with salt and pepper.
Sear salmon in high temp oil, seasoned with salt and pepper. Cook on one side for about 5 minutes, until a golden brown crust forms. Then flip, cook for a minute or so more, until fully warm in the middle.
To plate, combine 2 TBS of edamame puree with CrEATe oil, by stirring together in a small bowl. Drop a large spoonful of the combined puree on one side of the plate, and drag it to the other. Place the salmon and tumble the rutabaga to the side of the fish. And add any remaining puree if you wish. Garnish with reserved chili soy sauce.
