2 Idaho Potatoes
1/2 tsp Cornstarch
3 oz Mozzarella Pearls
6 springs Fresh Parsley
1 Dried Ancho Chili
2 oz Butter
10 springs Thyme
Preheat broiler at 400 degrees. Thinly slice potatoes into large matchsticks. Rinse in water, and drain. Cut mozzarella pearls in half or quarters. Finely chop parsley leaves. Mince shallot. Pick thyme leaves.
Place potato matchsticks on a tray. Toss with olive oil, salt and pepper. Bake in oven for 20 minutes at 400 degrees.
In a small heat proof container, cover dried ancho chili in boiling water. Cover with plastic film and set aside to soften for about 10 minutes. In a medium sized saucepan, sweat shallots over medium heat in ½ TBS of butter. Season with salt and pepper. Add thyme leaves, and cook until shallots are completely tender, about 5 minutes.
To saucepan with shallots, add juice of one lemon and stir quickly to combine. Add ¼ cup of the ancho chili water, bring to a boil. In 1 tsp of water, combine a pinch of cornstarch and whisk mixture into the sauce. Bring to a boil, and simmer for 3 minutes. Turn off heat and whisk in CrEATe Oil.
Assemble the fried potatoes with the mozzarella pearls and broil for 2 minutes. Watch carefully. Once the cheese begins to melt, remove and serve.
To serve, spoon gravy mixture over hot fries, and sprinkle with remaining parsley, and zest of ¼ lemon.
