3 small Russet Potatoes
3 TBS Butter
4 cloves Garlic
1/2 bunch Parsley
6 oz Grapes
4 Easter Egg Radish
1/4 cup Balsamic Vinegar
Preheat oven to 400 degrees. Thinly slice potatoes into coins ⅛ inch thick. Do not rinse. Peel garlic. Pick parsley leaves and slice in slivers. Rinse grapes and cut in half. Slice radish thinly and place in cold water.
Set balsamic vinegar to reduce over a low flame in a small sauce pot. Reduce to a thick glaze, about 15 minutes.
In a hot 9 inch cast iron pan, heat 1 TBS vegetable oil and begin arranging potato slices in a circular shingled pattern. Salt each layer lighltly, grate a little garlic, with 1 TBS butter to moisten the layers. Continue layering over medium heat for 2 minutes. Add butter if the bottom gets too hot. Layer all potatoes, using all the butter and garlic.
Cut to size, and place a piece of parchment paper over the potatoes, with a lid. Place the pan in the oven and cook for about 20 minutes, removing the paper after 15. Remove from oven after 20 minutes or when a fork glides through the layers easily. Allow to cool slightly before cutting.
Drain the radish slices. In a small mixing bowl, combine the parsley leaves, grape halves, and radish slices. Season with salt and pepper, and CrEATe Oil, and a couple drops of the balsamic glaze. Toss together.
Flip the tart from the pan, and slice in wedges. Drizzle with balsamic reduction, and top with grape salad.
