2, 6 oz Prime Ribe Steaks
5 oz Pinot Noir
10 spears Asparagus
2 Yukon Gold Potatoes
3 cloves Garlic
1 bunch Parsley
4 oz Butter
Trim Prime Rib of any excess fat. Mince shallot. Rinse asparagus, and then trim off tough ends, about 1 inch. Chop Yukon potatoes to 1 inch cubes and place in cold water. Peel and mince garlic cloves. Pick and chop parsley.
Cut butter into cubes with small divot on one side. Drop desired dose of CrEATe Oil into butter divot and place in the fridge. In medium saucepot, cover potatoes with cold water, season with salt and pepper, and bring to a boil. Cook over medium heat at a lazy boil until completely tender, about 15 minutes.
While the potatoes are simmering, cook the asparagus with olive oil, salt and pepper in a hot sauté pan for 3 minutes. As the potatoes finish, drain the water, and add 2 cloves garlic, 3 TBS olive oil, salt and pepper, zest and juice of ½ lemon and reserved water. Smash the potatoes to incorporate.
Season the Prime Rib with salt and fresh cracked pepper. Cook the steaks in the same pan you used for the asparagus, over high heat, approximately 6 minutes on each side. Remove from the pan at desired doneness.
In the same pan add shallots and cook about 3 minutes. Add pinot noir and boil to reduce, about 5 minutes. Once reduced to about 2 tablespoons, turn heat to very low and swirl in butter, one cube at a time. Season with salt and pepper, and a squeeze of lemon juice. Add chopped parsley.
Slice Prime Rib steaks against the grain and place over asparagus and potatoes. Spoon pinot noir sauce over steaks.
