2 Large Bulb Fennel
1/4 lb Purple Cauliflower
1/2 lb Chanterelles
1 bunch Thyme
4 oz White Wine
2 oz Butter
3 oz Goat Cheese
1/4 oz Fennel Pollen
Clean chanterelles by rinsing in cold water and lay on paper towels to dry. Cut purple cauliflower in quarters. Remove the bulb of the fennel and slice in juliennes. Slice 1 inch of stems in fine coins. Reserve 10 fronds for garnish. Pick and chop half of the thyme. Slice lemons into thirds.
Slice butter into 8 cubes, placing a divot in the center of 4 cubes, apply CrEATe Oil to butter, and refrigerate. On a sheet tray lined with parchment paper, spread fennel pollen, chopped thyme, zest of one lemon, salt and pepper in an even layer. Drop goat cheese in ½ inch balls onto seasonings and roll to coat evenly. Refrigerate.
In a hot sauté pan, sear purple cauliflower in olive oil with salt and pepper, about 5 minutes on each side. Add julienned fennel, and cook together for about 7 minutes with juice of one lemon.
Sear the chanterelles in separate, hot sauté pan in high temp oil. Season with salt and pepper, and cook on one side for about 5 minutes, until golden brown. Add 1 TBS butter, and thyme, and toss to coat.
Deglaze the pan by adding white wine, and simmer about 2 minutes. Swirl in cool butter with CrEATe Oil, and remove from the heat. Season with salt and squeeze of lemon.
Place the coins of the fennel on the plate like polka dots. Arrange the cauliflower and fennel around the dots, and top the dots with the cheeseballs. Arrange the mushrooms to accessorize the cheeseballs, and drizzle sauce all around. Garnish with fennel fronds.
