10 oz Haddock
1 Dark Lager
1 cup All-Purpose Flour
2 TBS Cornstarch
2 TBS Mayonnaise
1 large Dill Pickle
1 bunch Parsley
6 oz Tiny Potatoes Marble
Pick and chop the parsley. Slice the lemons in wedges. Cut half the pickles in small mince, and the other half in thick slices. Cut the haddock in 4 long pieces.
Place marble potatoes in a quart of cold salted water with a large pinch of black pepper and a TBS of olive oil. Bring to a boil over medium high heat, then turn heat to medium low and simmer for 15 minutes, until potatoes are tender. Once cooked, drain, and toss with olive oil, parsley, salt and pepper, zest and juice of ½ lemon.
In a small bowl, combine mayonnaise, zest and juice of ½ lemon, chopped pickles and a pinch of chopped parsley. Stir to combine, adding a pinch of salt and pepper, and CrEATe Oil. Set aside.
In a large mixing bowl, whisk together AP flour, cornstarch, 1 TBS salt, 1 TBS pepper, and zest of ½ lemon. Set aside ½ this mixture. Gently pour in 10 oz of the lager and stir only to combine. Do not over mix. Add a tablespoon of water at a time if needed.
Dip haddock fillets into remaining dry mixture, and then into batter and fry in hot vegetable oil for about 4 minutes, until golden brown all over and cooked through. Once crispy, remove to paper towels and season with salt.
To serve, arrange potatoes, sliced pickles, and fried haddock in a basket with paper, and serve tartar sauce on the side with lemon wedges. Garnish with chopped parsley.
