1 head Frisée Lettuce
2 TBS + 1 tsp Honey
2 tsp Mustard
10 oz Bacon
1 Green Apple
3 oz Goat Cheese
Slice the bacon into thin pieces; set aside. With a clean cutting board, finely mince the shallot. Slice a lemon for squeezing. Slice the apple into thin matchsticks. Place the apple in cold water with a squeeze of 1/3 a lemon. Rinse the frisée lettuce. Remove outer leaves, leaving the inside frilly yellow parts. Cut the root tip off the lacy leaves.
Place the bacon in a hot sauté pan, over medium to low heat. Stir often to cook out the fat, for approximately 10 minutes. When the bacon has cooked all the way, strain out the cooked pieces, and reserve the warm bacon fat for the vinaigrette. Wipe the pan clean with a paper towel. While the bacon is cooking, make the vinaigrette.
In a medium bowl, place the shallots and add to it the juice and zest of one lemon, 1 tsp honey, mustard, salt and pepper. Mix this thoroughly together with the base of the vinaigrette, and then drizzle in bacon fat (about 1 TBS). Leave in a warm place.
Whip the goat cheese (can substitue with blue, feta, or parmesan cheese if desired) with 2 TBS honey, and incorporate the desired dosage of CrEATe Oil.
Crack the eggs over a hot nonstick sauté pan, (using the same one as the bacon is fine) season with salt and pepper, cooking one side about 2-3 minutes, then cover, adding a tablespoon of water just before the lid. Wait 2 minutes, and remove the lid. The white of the egg should be just set, and remove the pan from the heat.
Toss the frisée, apples, and bacon, and in a mixing bowl with vinaigrette. On the plate, spoon goat cheese in line, top with salad, and finally the hot egg. Make sure to use a rubber spatula to remove all of the contents of the mixing bowl to the plate.
