1 loaf French Broad
1 ear Corn On The Cob
6 leaves Black Kale
1 lb Crimini Mushrooms
1 bunch Parsley
3 cloves Garlic
3 oz Mascarpone Cheese
1/2 cup Crushed Hazelnuts
Remove corn (use frozen if fresh is unavailable) from the cob. Wash and trim kale, removing and discarding stems. Quarter crimini mushrooms. Pick and chop parsley. Mince garlic cloves. Crush hazelnuts with parchment paper and heavy bottomed pan. Slice French bread to large ovals.
Season bread slices with olive oil, salt and pepper, and toast under a broiler, about 5 minutes
Using a hand blender, whip the mascarpone cheese in a medium mixing bowl with CrEATe oil. Add 1 TBS of olive oil with zest of juice of 1/3 lemon.
In a hot pan with high temp oil, sauté corn kernels, until golden, about 2 minutes, then set aside. In the same pan, sauté crimini mushrooms for about 5 minutes, seasoning with salt and pepper. Add 1/2 the garlic and toss together. Cook for about 2 minutes more, and squeeze 1/3 of a lemon into the pan. Toss the lemon into the mushrooms, and remove from the heat, set aside.
In a hot pan with olive oil, toast the remaining garlic, about 2 minutes, until starts to turn golden brown. Then add kale (can use spinach if unavailable), season with salt and pepper, stir to incorporate. Add 2 TBS water, juice of 1/3 lemon, and cover. Cook for about 4 minutes, until wilted and tender.
Spread the mascarpone cheese in a thin layer atop the toast, then sprinkle parsley, add kale and mushrooms, and corn evenly. Cover with hazelnuts. Cut in wedges to serve.
