1 lb Flank Steak
1 can (12 oz) Coconut Milk
1 tsp Fish Sauce
1 Sweet Yam
2 bundles Green Beans
1" piece Ginger Root
4 cloves Garlic
Cut two limes in half. Peel and dice the sweet yam. Clean the ends of the green beans, and cut into 1 1/2 inch pieces. Mince the ginger root. Mince the garlic.
Season the flank steak with salt and pepper. Sear in a grill pan with oil, one one side for about 5 minutes, or until bold grill marks are present. Flip over and cook for another 3-4 minutes. Once cooked, set aside to rest.
Once the steak leaves the pan, deglaze with juice and zest of 1 lime, and half the can of coconut milk. Add 2 cloves of garlic, and 1/4 of the ginger, zest of one lime, a pinch of black pepper, and simmer for 5 minutes.
While the sauce is simmering, in a new sauté pan, sauté the sweet yams, for 5 minutes. Then add juice of 1 lime, and 2 TBS water. Cover and allow to cook about 2 minutes.
Once the sweet yams are tender, add green beans, a pinch of salt, and cover for about 2 minutes. Remove the coconut milk sauce from the heat, and season with fish sauce, and CrEATe oil.
Place cooked vegetables in the center of a shallow bowl, ladle the coconut milk sauce around the veggies. Slice the beef across the grain, and place on top of the vegetable mixture.
