1, 10 oz Rockfish Fillet
1 cup All-Purpose Flour
1+3/4 cup Milk
1 head Butter Lettuce
4 TBS Butter
2 Yukon Gold Potatoes
Mince the shallot. Cut the potatoes in large dice. Clean the lettuce, removing outer leaves, and the root tip. Cut the lettuce into 2 inch pieces. Cut the plums in wedges. Cut the lemons in thirds lengthwise. Season the flour with salt and pepper, zest of one lemon.
In a 2 qt saucepot, cover the potatoes in cold water, and bring to a boil with salt. In an adjacent pot, bring to a simmer ½ cup of milk. Once potatoes boil for 10 minutes, and are completely tender, strain, and blend in hot milk and 3 TBS butter and add CrEATe Oil. Add salt and pepper and set aside in a warm place.
Combine 1 cup milk, with ½ the seasoned flour. Stir to completely incorporate.
In a new sauté pan, heat ½ inch of vegetable oil. Dust the rockfish fillets in seasoned flour, then dip in the milk batter, and fry the rockfish fillets in the oil for about 4 minutes, flipping once first side is golden brown. Add 1 TBS butter. Once golden on both sides, remove from the pan and place on paper towels.
While the fish cooks, in a new pan, add the shallots and 1 TBS butter. Melt the shallots over medium heat for 2 minutes, then add 1 tsp of seasoned flour, and toast with a whisk. Add 2 TBS water. Whisk vigorously. Add ¼ cup milk and stir frequently over medium heat for 3 minutes. Add remaining butter, and squeeze ½ of a lemon.
Place the potatoes on the plate, and the rockfish against, with gravy over top. Serve the butter lettuce and plums dressed in olive oil, salt, pepper, and squeeze of lemon.
