1 lb Flank Steak
1 can Worcestershire Sauce
1 small can Garbanzo Beans
1 TBS Tahini
4 oz Feta Cheese
2 handfuls Arugula
Slice peach in wedges, mincing 2 wedges. Cut baguette into large 1 “ thick slices. Slice lemons in thirds. Rinse garbanzo beans under cold water. Cut flank steak in ½ across the grain, and cover with Worcestershire sauce, reserving 1/3 of a cup.
Boil 1 qt of water in a 2 qt saucepot. Add garbanzos, a pinch of salt, and pepper. Boil for 5 minutes and strain. Rinse and pour into a blender. Add tahini with ¼ cup water, ¼ cup olive oil, zest of ½ lemon and juice of one lemon, salt and pepper. Blend until smooth. Add water, olive oil, and lemon juice 1 TBS at a time if needed. Set aside.
In a large mixing bowl, combine minced peach with zest of ½ of one lemon and juice of one lemon, 1 TBS olive oil, desired dosage of CrEATe Oil and season with salt and pepper. Add peach wedges and set aside.
Season baguette slices with olive oil, salt and pepper. Then toast in broiler for about 4 minutes on either side.
In the same pan, grill flank steaks for about 6 minutes on either side, depending on size and desired doneness. When cooking is completed, add 1/3 cup Worcestershire sauce, and then turn off the heat. Let rest 5 minutes, then slice.
To serve, tear the baguette into 1 inch chunks and toss with arugula and half the feta cheese in peach vinaigrette. Drop large spoonful of garbanzo puree on the plate, and round out. Placing sliced flank steak across, with the salad on top. Garnish with remaining feta cheese.
