1 large Pork Chop
1 small Yellow Onion
1 TBS Whole Grain Mustard
1 cup Heavy Cream
6 Baby Carrots
1 Granny Smith Apple
1 small handful Golden Raisins
1 bunch Parsley
Pick the parsley leaves. Slice lemons in thirds lengthwise. Cut apples into matchsticks and place in cold water with squeeze of lemon. Slice the onion in small dice. Chop 1/3 of the raisins in small pieces.
Season pork chop (1 large or 2 thin) liberally with salt and pepper. In a hot pan, sear pork chop until golden brown on one side, about 6 minutes. Flip over and cook the other side for about 3 minutes, depending on thickness of chop. Add the whole golden raisins and small diced onions. Remove pork, and set aside.
Sweat the onions for about 3 minutes to remove debris from cooking pork. Once translucent, add the heavy cream, and simmer for 5-10 minutes, until cream reduces and thickens. Keep on low heat and whisk in whole grain mustard. Take off from the heat, add the CrEATe Oil and combine together. Set the sauce aside.
While the pork is cooking roast the baby carrots in a separate, hot saute pan with olive oil. Season them with salt and pepper, and cook for about 5 minutes, until blistered on one side, and tender throughout.
In a small bowl, combine juice of 1/3 lemon, a pinch of salt and pepper, chopped raisins, and 2 tsp olive oil. Use this sauce to dress the apple matchsticks and parsley leaves.
Place carrots in a fan shape on the plate, and sliced pork chop topped with onion and raisin relish. Pour sauce all around, and garnish with apple parsley slaw.
