2 small Chicken Breasts
1 can Tomato Sauce
1 small can Chipotle Chili
1 quart Chicken Broth
1 bunch Cilantro
1 handfull Tortilla Chips
1 small White Onion
Mince the onion. Finely chop the cilantro. Peel skin, and remove pit from avocado. Slice ½ in thin slices and cover with plastic film, refrigerate. Cut one of the chicken breasts into small dice. Cut limes into wedges.
In a large sauce pot, over high heat with vegetable oil, cook the diced chicken with salt and pepper until golden and crispy, about 5 minutes. Then add all but 2 TBS diced onion and 2 TBS of chicken broth. Stir frequently, turning heat to medium for 2 minutes.
Add 2 TBS chipotle chili adobo sauce, can of tomato sauce (can sub with tomato puree), and ½ the box of chicken broth. Season with salt and pepper. Bring to a boil and simmer for 5 - 10 minutes, and add juice and zest of one lime.
Season the chicken breast with salt and pepper. Sear in a hot cast iron pan with vegetable oil for about 6 minutes on one side, until golden brown. Flip over and cover, turning the heat to medium, and cook for another 5 minutes, until completely cooked through. Remove from heat and allow to rest before slicing.
In a small bowl, mix ½ of the avocado with CrEATe Oil, one pinch of salt and pepper, and juice of ½ lime, 1 TBS chopped cilantro, and 2 TBS minced onion.
Ladle the soup broth into serving bowls. Portion chicken breasts into each bowl, and drizzle avocado gremolata all over. Garnish with sliced avocado, tortilla chips, lime wedges and cilantro.
