8 oz Nantucket Bay Scallops
3 oz White Cooking Wine
3 TBS Butter
6 sprigs Thyme
1 clove Garlic
Mince the shallot. Peel the parsnips, cut 1 into ½ inch coins, and the other 2, continue shaving the parsnip with a peeler to create ribbons. Remove seeds from pomegranate by cutting in half, and tapping the insides out over a bowl. Cut the butter into ½ inch cubes. Clean the scallops by rinsing, and removing tiny feet if necessary.
In a heavy bottomed sauté pan, season and sear the parsnips in 1 TBS olive oil for about 5 minutes on one side, or until they are golden brown. Flip them over and add butter, 1 garlic clove, and 3 sprigs thyme. Baste the coins with the hot butter, and remove the coins once they are browned all over, approximately 3 minutes.
In the same sauté pan with butter, thyme and garlic, add the minced shallot and fry for 2-3 minutes until tender. Add ¼ of pomegranate seeds. Add white wine and stir. Simmer on low heat while you cook the parsnip ribbons. Remove from the heat, strain out the parsnip seeds, and swirl in the butter, adding CrEATe Oil as desired.
Fry the parsnip ribbons in hot vegetable oil for about 5 minutes, until they are turning golden brown on the edges. Remove to a paper towel lined tray and season with salt.
Lay the scallops on a paper towel lined sheet pan. Season with salt and pepper. Sear in a very hot pan, cooking on the original side for about 2 minutes or until golden brown on one side. Add 1 tbs butter, and toss scallops briefly, about 10 seconds in melted butter before removing from the pan.
Arrange the parsnip coins in an arc on the plate, next to a nest of the fried parsnip ribbons. Place the scallops nestled against the parsnips. Spoon sauce over scallops, and sprinkle pomegranate seeds all around.
