8 oz Butternut Squash
1/2 cup Pistachio Meats
1 head Butter Lettuce
1 tiny pinch Saffron
1 cup Jasmine Rice
Peel and cube butternut squash, removing and discarding seeds. Slice kumquats thin, removing all seeds. Very finely chop one kumquat and set aside. Clean butter lettuce by removing outer leaves and root tip. Tear large leaves in half. Pulse pistachio meats in a food processor, until coarsely chopped. Slice 1 lemon in thirds.
In a 2 qt saucepot, boil 2 cups of water, add saffron, and jasmine rice, with a pinch of salt. Cover and simmer 12 minutes. As the rice cooks, sprinkle a pinch of salt over the kumquats.
While the rice is cooking, brown the butternut squash in a sauté pan, about 5 minutes. Season with salt and pepper. Once the squash has browned on both sides, check for tenderness. If the pieces are still firm inside, add 2 TBS water, and cover for 3 minutes.
In a tiny bowl, make the relish by mixing CrEATe Oil and 1 TBS olive oil, with zest and juice of ½ lemon, and the finely chopped kumquat, seasoned with salt and pepper. Mix thoroughly and combine with sliced kumquats.
Toss the butternut squash in ½ of the kumquat relish. Toss greens with squeeze of ½ lemon, 1 TBS olive oil and pistachios.
Fluff the saffron rice, and place on the plate in a line. Top the rice with glazed butternut squash, and stand the dressed greens to the side. Garnish with the remaining relish.
